Recipe of Seekh Kebab

Seekh (skewers) kabab could be without seekh (skewers) and served along with yogurt dip and a salad of onion.

Let's make seekh kabab in a traditional way.

Ingredients

For the Kababs:

  • 500g (1 lb) ground beef or lamb (substitute: chicken for a leaner option)

  • 1 small onion, finely chopped (squeeze excess water)

  • 2 tbsp fresh cilantro, chopped

  • 1 tbsp mint leaves, chopped (optional for freshness)

  • 1 tbsp ginger-garlic paste

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1 tsp garam masala

  • ½ tsp red chili powder (adjust to taste)

  • ½ tsp turmeric powder

  • ½ tsp black pepper

  • 1 tsp salt

  • 1 tbsp lemon juice

  • 1 tbsp gram flour (besan) or breadcrumbs (for binding)

  • 1 tbsp oil (for brushing)

Before We Start

  • Use cold meat – Helps the kababs hold shape.

  • Remove excess moisture – Squeeze onions before adding.

  • Chill before shaping – 30 minutes in the fridge makes it easier.


Instructions

Prepare the Mixture

Step 1: Take a bowl, add ground meat, and all spices (ginger-garlic paste, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder), cilantro, mint leaves (chopped), black pepper, salt, onion (finely chopped), lemon juice, and gram flour.

Step 2: Mix well and knead it until combined and sticky.

Step 3: Cover the bowl and let it rest for 3 minutes in the refrigerator.

Shape the Kababs

Step 4: Take out the bowl, scoop a small portion of the mixture, and shape it round over skewers (seekhen) or a wooden stick simply.

Step 5: To shape it over wooden skewers, soak them in water for 20 minutes to avoid burning.

Step 6: If you don't have sticks or skewers, shape the mixture by hand into long patties.

Cook the Kababs

Step 7: There are different ways to cook them. If you are not using a grill, you can use a stovetop or oven. Here are the solutions for you:

Grill (Best Flavor)

  • Preheat the grill and brush it with oil.

  • Place kababs over it and cook for 8-10 minutes, turning slowly as they cook.

Stovetop (Quickest)

  • Heat a tawa or pan, pour some oil, and place over medium flame.

  • Cook kababs for 6-8 minutes until browned.

Oven (Easiest)

  • Preheat the oven to 200°C (400°F).

  • Bake kababs for 15-20 minutes, flipping halfway.

Finish It

After cooking the seekh kababs, place them on a tray or plate. Add a few mint leaves and serve with chutney (sauce) or yogurt sauce. Enjoy every bite!

Serve

Use a wooden platter or sizzling one (your choice). Serve on a cast iron or copper dish (as it was traditional). Garnish with lemon wedges or fresh coriander. Place small bowls of chutney (sauce) and yogurt dip (raita). Add tissues and a tablecloth for a decent look. A cup of tea or lemonade will go best as a drink.

Ingredients:

  • 1 medium onion

  • 1 medium tomato

  • 1 green chili

  • Dried mint leaves

  • Pinch of cumin seeds

  • Lemon squeeze

Steps:

  1. Cut an onion into ring circles, chop green chili, and cut tomatoes into pieces. Place them on a plate and mix.

  2. Rub the cumin seeds between your fingers, sprinkle over the salad, add dried mint leaves, and squeeze lemon over it.

  3. Mix the whole salad well—and done!

Ingredients:

  • Coriander powder

  • Cumin

  • Garam masala

  • Red chili

  • Black pepper

  • Salt

Steps: 

  1. In a jar, add all the spices, mix well, and use it.

Ingredients:

  • Minced chicken

  • Onion

  • Garlic

  • Spices

  • Bread crumbs

Steps:

  1. Add all ingredients into a bowl, mix well, shape around seekh (skewers), and grill or fry until golden brown.

Ingredients:

  • Cooked seekh kebabs

  • Roti

  • Yogurt sauce

  • Salad

Steps:

  1. Place kebab in roti, add sauce and salad over it, roll tightly, and serve.


Seekh Kabab Juicy and Soft?

  • Use butter or cream in the mixture.

  • Onion has water itself, so add very little onion.

  • Cook over medium heat to prevent dryness.


How Much Time Does Frozen Seekh Kabab Last?

  • Store in an airtight bag for up to 3 months.

  • Reheat in an oven or pan before serving.

  • Oven: Preheat to 200°C (400°F) and bake for 15-20 minutes.

Once done, swirl the sauce and serve along with yogurt sauce.
